| Eggplant Bhaji Recipe
Ingredients
Eggplant(Brinjal/Vazhuthananga) - 1
Grated coconut - 4 tbsp
Onion(chopped) - 1/2
Sugar - A pinch
Salt - As reqd
For seasoning:
Oil - 2 tbsp
Black gram(Uzhunnuparippu) - 1 tsp
Mustard seeds - 1/2 tsp
Red chillies or green chillies - 2 nos
Asafoetida(Kayam) - 1/2 tsp
Method :
1)Grill or roast eggplant on a gas stove. Remove the skin. If these are not available, then pressure cook the eggplant without adding water. Then take it on a plate and mash with a ladle. Keep aside.
2)Heat oil in a pan.
3)Add all the seasoning ingredients one by one. When it splutters, pour it over the mashed eggplant.
4)Sprinkle salt and sugar.
5)Add grated coconut and chopped onion.
6)Mix well.
